Chili and Lime Deviled Eggs

Chili and lime deviled eggs…now this is a zesty spin to the classic!

Makes 24 half eggs

12 eggs
2 tablespoons mayonnaise
2 tablespoons lime juice
2 tablespoons jalapeño, finely chopped
Salt and pepper

Hard-boil the eggs. Place a layer of eggs in a pot large enough to fit all 12 in one layer at the bottom. Boil the eggs over medium heat without a lid for 9-10 minutes. Afterwards, pour cold water over the eggs to stop the cooking process. Peel the eggs and slice in half lengthwise. Pop the yolks out and place them in a medium bowl. Sprinkle the yolks with salt and pepper. Add mayonnaise, lime juice, and jalapeño. Mash the yolks with a fork and mix until it becomes a smooth paste. Arrange the whites on a plate and spoon the yolk mixture back into each hole. Pile the filling high. Enjoy!
