Brussels Sprout Hash and Eggs

There’s no better way to get a healthy start to your day than getting your vegetables in at breakfast!

brussel sprouts

4 cups Brussels sprouts, finely chopped
1 tablespoon butter
2 tablespoons water
3 cloves garlic, finely chopped
6 olives, finely chopped
2 eggs
Lemon juice, salt, and pepper to taste


Melt the butter in a nonstick pan to coat the pan. Add the Brussels sprouts and garlic to the pan and allow to cook for one minute. Stir the ingredients. Add olives and stir the ingredients again. Crack the eggs onto separate areas of the same pan and sprinkle with salt and pepper. Pour in 2 tablespoons of water and cover with a lid to let eggs steam for about 2 minutes. Once the egg whites are cooked, turn off the heat and sprinkle with lemon juice.
